This lot is processed using the Hydronatural method — a hybrid approach that begins with careful cherry selection followed by a brief period of anaerobic fermentation in water. This controlled step encourages the development of complex flavors. The whole cherries are then dried naturally with the skin and mucilage intact, allowing the coffee to retain its inherent sweetness and fruit-forward profile.
