Tropical Nature Fruit Fermentation
The Management Hub La Reserva is part of the buffer
zone of the Cueva de los Guácharos National Natural
Park, which belongs to Colombia's National System of
Protected Areas. It is located in the Colombian massif
between the departments of Huila, Cauca, and Caquetá.
Eight coffee-producing farms make up this hub, working
under the InConexus management hub methodology. This
involves tailored extension methods like farm visits,
group meetings, conferences, and field days.
Alvaro Mora represents this 8-farm hub with his pivotal 7
ha farm ‘Los Cedros’. As a second-generation coffee
grower, he bridges ancestral knowledge with new
practices introduced by his grandchildren. His interest in
agroforestry found a partner in InConexus' drive for
regenerative agriculture.
It was chosen because of its good sensory profile and
favorable agri-environmental conditions.
Neighboring farms with similar conditions are then
invited to join, allowing for increased consistency in
profile and production volume.
Tropical Nature is an anaerobic coffee that is fermented for 288 hours in tanks and is innoculated with Mossto before being dried for 25 days.
